Nutr 203 - Introduction to Food, Nutrition, and Dietetics
Historical Sketch Assignment:
The purpose of this assignment was to reflect on a historical/famous figure in the food and nutrition industry, discussing their accomplishments and impact on food and nutrition as a whole. I chose Chef Emeril Lagasse, a food and nutrition figure that not only has shared his talent with food but is a leader in this field.
This assignment taught me that it takes hard work to reach success in any field, but being a leader will definitely prove confidence leading up to success. I enjoyed writing about Mr. Lagasse and reflecting on his accomplishments for the food and nutrition industry.
Self-Assessment Assignment:
The purpose of this assignment was to evaluate my personal and professional goals for the next year, 5 years, and 10 years.
This assignment helped me to think about all the things I want to accomplish over the next 10 years. It taught me to organize my goals as personal or professional, and then to evaluate those goals to determine how and when I will likely accomplish them. It was a very helpful way to figure out what goals are important to me, and which ones I want to accomplish to be successful in my future career.
NUTR 205 - The Profession of Dietetics
Position Paper Assignment:
The purpose of this assignment was to demonstrate my communication skills for entry into pre-professional dietetics practice. I was able to apply my critical thinking skills as well as demonstrate effective professional oral and written communication and documentation.
We chose the Academy of Nutrition and Dietetics position paper titled, "Nutrition Services for Individuals with Intellectual and Developmental Disabilities and Special Health Care Needs." By doing this assignment, I have learned how to apply critical things skills to a topic that is related to nutrition and dietetics, as well as more information about the specific group that we chose to demonstrate these skills with.
Mentoring Assignment:
The purpose of this assignment was to discuss the fundamental principles of mentoring relationships and participate in a mentoring activity. I am able to demonstrate an understanding of the importance and expectations of a professional in mentoring and precepting others.
By doing this assignment, I was able to learn the importance of mentoring in Nutrition and Dietetics, importance in creating relationships within the field, and the importance of finding a mentor that I can have a professional and/or personal relationship with.
NUTR 378 - Nutrition for Fitness and Sport:
Complete Athlete Assessment Project:
The purpose of this assignment was to assess different athletic sport needs and requirements to fuel optimum performance. We were given a specific athlete's requirements and then had to develop a full day of eating from fast food/restaurants. We also had to develop a day of exercise to meet up with the number of calories the athlete takes in.
By doing this assignment, I have learned how to assess an athlete by providing calculating adequate calorie needs, activity needs/requirements, and how differently athletes should be assessment compared to the general public.
NUTR 396 - Nutrition Throughout the Lifecycle
Life Cycle Project:
The purpose of this assignment was to choose a person in a life cycle phase of your choice, and to determine/assess their caloric and nutritional needs, and give recommendations based on their life cycle stage.
By doing this assignment, I have learned how to calculate calories and do simple assessments for people in all life cycle stages, information on each individual life cycle and what their requirements are, and how to offer recommendations throughout these stages.
NUTR 397 - Nutrition in Health Promotion and Disease Prevention
Project 2 - Research on Disparities in a Cultural Group:
The purpose of this assignment was to determine the health and nutritional concerns and disparities among people in different cultural groups. Our chosen cultural group was high school track athletes, which is a group that faces several factors such as anxiety and depression, mental issues, injuries and lack of nutritional knowledge.
This assignment has taught me how to find accreditable resources for a particular topic or idea, how research can be used to better myself as well as the people around me, and several cultural groups that need health and nutritional help.

The purpose of this assignments and projects was to determine be able to learn how to locate, interpret, evaluate and use professional literature to make ethical, evidence-based practice decisions, to use current technologies to locate and apply evidence-based information, how to use critical thinking skills, hot to effectively write and document information to communicate with others professionally and how to assess the impact of a public policy position on nutrition and dietetics practice.
